This IGP is cold extracted not filtered. Nocellara is one of the most widely known olives in Sicily & it's known for its bold & intense flavor. 
Flavor profile described as Strong (artichoke/ fresh grassy)  taste.
It has a touch of sweetness to it. It is spicy & bitter at first.

Our Extra Virgin Olive Oil  comes from a careful selection of olives from all exclusively from the Sicilian territory and precisely from the provinces of Trapani and Palermo, the olives selected for this type of oil are exclusively Nocellara del Belice which are classified among the best oil olives in the world. To obtain the  IGP Sicily oil, the olives are harvested in the period between 10 October and 20 November in order to obtain an oil with exceptional organoleptic characteristics and very low acidity. Manual harvesting methods are also used and the oil is obtained no later than eight hours from the olive harvest, it is stored inside a stainless steel tank placed under nitrogen saturation and inside rooms at a controlled temperature in order to preserve its quality over time.

The Extra Virgin Olive Oil produced in our factory is a product of exceptional quality, obtained with a continuous "two-phase" extraction method that allows us to obtain a product with a higher organoleptic level, with a distinctly high quantity of antioxidants. superior to any extra virgin produced with the traditional method.

Our 100% Italian Extra Virgin Olive Oil comes from a careful selection of olives coming exclusively from the Sicilian territory. They are harvested and pressed within 12 hours using very strict harvesting, storage, and milling methods to preserve their quality. It is a non-filtered product, as it is left to decant for a period inside storage tanks. Through this process, we obtain an extra virgin olive oil of excellent quality, suitable for all dishes.
